Lemon Cucumber Dill Sandwiches

These little sandwiches are one of my go-to party recipes. The creamy, lemony dill spread paired with crisp, salted cucumber is simple, fresh, and always a crowd pleaser.
Lemon Cucumber Dill Sandwiches
Ingredients
Lemon Dill Cream Cheese
- 2 ounces cream cheese, softened
- 1/2 lemon, juiced
- 2–3 tablespoons fresh dill, finely chopped, plus more for topping
- Salt, to taste
Sandwiches
- 4 small slices of soft sandwich bread
- 1 small cucumber, sliced as thinly as possible
- Salt, for drawing out excess moisture
Instructions
Make the Lemon Dill Cream Cheese
- 1
In a small bowl, combine the softened cream cheese and juice from 1/2 lemon. Mix until smooth and creamy.
- 2
Stir in the fresh dill and a small pinch of salt.
- 3
For the best flavor, cover and refrigerate overnight to let the flavors develop. About 30 minutes before serving, take the cream cheese out of the refrigerator to soften.
Prepare the Cucumbers
- 1
Slice the cucumber as thinly as possible.
- 2
Arrange the slices on a layer of paper towels and sprinkle lightly with salt.
- 3
Let them sit for about 10–15 minutes. The salt will draw out excess water from the cucumber.
- 4
Pat the cucumber slices thoroughly dry with paper towels. This step is important so your sandwiches don't become soggy.
Assemble
- 1
Cut the bread into circles using a small round cutter.
- 2
Spread a generous layer of the lemon dill cream cheese.
- 3
Top with the cucumber slices, overlapping them slightly if needed.
- 4
Sprinkle with a little extra fresh dill.
- 5
Serve immediately, or keep chilled until ready to serve.
Lauren's Note
- Open-faced or closed: I love making these both ways. For a prettier presentation, serve them open faced. For a more traditional tea sandwich, add a second piece of bread on top.
- Don't skip drying the cucumbers: Cucumbers hold a surprising amount of water. Salting and thoroughly patting them dry keeps the sandwiches fresh instead of soggy.
- Make it ahead: The lemon dill cream cheese is even better when made the night before. Just bring it back to room temperature for about 30 minutes before assembling.
