Lauren's Note
- Reducing the apple cider: Start with 250 g of apple cider and simmer until you have 100 g remaining. This concentrates the apple flavor without adding too much liquid to the batter. Allow it to cool before adding it to the other ingredients.
- Don't overmix the batter: Once you add the dry ingredients, fold just until the flour is incorporated. Overmixing can make the loaf dense.
- Whipped cream consistency: Stop whipping once the cream forms soft or medium peaks for a light, creamy topping. Keep refrigerated until serving.
- Storage: Store the plain loaf in an airtight container at room temperature for up to 2 days. Refrigerate for longer storage, up to 5 days. Store the stewed apples and whipped cream separately in the refrigerator.
Frequently asked questions
Absolutely! The apple butter and concentrated apple cider give the loaf plenty of flavor on its own. The cinnamon-stewed apples and vanilla bean whipped cream simply make it feel more like a special fall dessert.
Reducing the cider concentrates its flavor, giving the cake a stronger apple taste without adding excess liquid that could affect the texture.
Honeycrisp apples are great for a naturally sweet topping, while Granny Smith apples provide a tart contrast to the brown sugar and apple butter. You can also use a combination of both.
Slice the loaf, warm each slice slightly if desired, spoon the warm cinnamon-stewed apples over the top, and finish with a generous dollop of vanilla bean whipped cream. Serve immediately for the best contrast between the warm apples, tender cake, crunchy sugar crust, and cool cream.
