Pumpkin Overnight Oats

Creamy, cozy, and packed with pumpkin spice flavor, these pumpkin overnight oats are the easiest fall breakfast. They come together in just a few minutes, then the fridge does all the work overnight. They're lightly sweetened with maple syrup and have just the right amount of pumpkin and warm spices.
Pumpkin Overnight Oats
Ingredients
- ½ cup old-fashioned rolled oats
- ½ cup milk of choice (almond or oat milk work great)
- ¼ cup pumpkin purée
- 1 tbsp maple syrup
- ½ tsp pumpkin pie spice
- ¼ tsp vanilla extract
- Pinch of salt
- 1 tbsp chia seeds, optional

Add the oats, milk, pumpkin purée, maple syrup, pumpkin pie spice, vanilla, salt, and chia seeds (if using) to a jar or container.

Stir thoroughly until everything is well combined.

Cover and refrigerate for at least 6 hours, preferably overnight.

In the morning, stir the oats, add your favorite toppings and enjoy!

- For sweeter oats: Add another ½–1 tablespoon of maple syrup to taste.
- For thicker oats: Chia seeds will give the oats a thicker, more pudding-like texture.
- For thinner oats: Simply add an extra splash of milk in the morning.
- For a more fall-spiced version: I like to replace half of the milk with chai concentrate.

You can, but the texture will be softer and less chewy. Old-fashioned rolled oats give the best texture.
